SOUPS:

(CP)= Complete Protein(V)=Vegetarian, can be Vegan

>Spicy Corn & Potato Soup(V)~Roasted corn, potatoes, red peppers & a hint of chipotle…wow!

>Curried Apple and Butternut Squash Soup(V) Fabulous!(F)

>Corn & Cheddah~Chowdah(V) (CP)~ Corn, New England aged cheddar in a creamy (even though I use milk..) base….comforting! (can have Chicken 0r andouille sausage)(F)

>Lentil & Sweet Potato Stew (V) (CP) Hearty and so good(F)

>Tortellini en Brodo(V)(CP) a simple Italian soup consisting of chicken broth and pasta (Can have mini chicken meatballs) This soup is  a wonder.

>Tuscan Tomato Soup(V) a thick and hearty pureed soup, garlic-y & delish(F)

>Portuguese Kale Soup(V) chicken sausage opt~ hugely popular soup~ tomato base w/ potatoes, beans and Kale(from my garden)

>Vegetable Beef Soup~ yummy!(F)

>Cabbage & Potato Soup(V) ham opt. Hearty and cabbage-y

>Wild Mushroom Soup(V) All mushroom… Earthy and satisfying…if you love mushrooms, then this is your soup(F)

>Minestrone(V) An Italian favorite, my Grampa Vasta’s recipe

>Chicken & Rice~Good cold remedy!(F)

>Moroccan Chicken Curry Soup~ a lightly curried  soup w/ chick peas and green beans (can be veggie)

>Carrot Rosemary soup(V) This pureed soup is silky and savory(F)

>Butternut Squash & white bean Soup(V) (can have ham)

>Broccoli/ Cheddar Sou (V)A creamy blend of broccoli & potatoes with New England  Extra Sharp Cheddar

<Manhattan Clam Chowder~The Classic w/ wild caught (not farmed) clams

>Lentil soup(V)(F)

>Split Pea Soup(V)(F)

>Hearty Vegetable Soup(V)~ a thick, veggie packed soup, broth & tomato based~ YUM!

>Potato Dill Soup(V)~  A creamy (can use soy or rice milk) yukon gold potato-y soup, perfect cold weather comfort!

>Italian Wedding Soup~A broth based soup with pasta and mini-meatballs

>Hot & Sour Soup~ a Chinese soup , spicy hot and a tad sour with carrots, onion. tofu, water chestnuts, bean sprouts and bamboo shoots. Can be (V) or can contain pork in a chicken broth base.

 

 

Salads:

GIANT Salad~ Huge bowl of greens and veggies, apples & nuts or sunflower seeds, (opt: sprinkled with blue cheese or feta) and (opt) your choice, chicken or shrimp. Balsamic Vinaigrette on the side (opt). Please be specific as to servings & options

Asian Cole Slaw~ A mix of red & green Cabbage, carrots & red onion Tossed with a peanut-y sesame dressing….very light and a nice change from traditional slaw

Kale Slaw~ Raw kale (from my garden) veggies w/ a orangy dressing. Delicious and a powerhouse of nutrition!

Tuna ala Vasta~ Tuna dressed w/ oil & red wine vinegar, onions, capers, olives, carrots, celery.

Raw Vegetable Salad~ As many raw veggies as I can think of, lightly dressed in your choice: Balsamic or Red wine Vinaigrette

Whole grain Veggie Salad~ Farro or wheat berries or brown rice or millet or barley w/ fresh veggies in a mustard-y dressing

Fennel~ Apple Slaw~ Thinly sliced fennel & apples , a cool and refreshing mix!

Shredded Beet Salad~ with a citrus dressing, better than good!

Traditional Potato Salad, Cole Slaw, Whole wheat Macaroni Salad ~ mayo based dressings, Mom’s recipes…a taste of childhood summer

Italian Pasta Salad~ Whole Wheat Rotini w/ artichoke hearts & veggies

Jicama Stick Salad~ Matchstick cut jicama in a citrus dressing….crunch!

Quinoa & Black Bean Salad~(CP) (V) Loaded w/ sweet peppers & red onion & a lemon dressing….my favorite. Ask for avocado , a perfect side.

 Sesame noodles~w/ sliced red peppers , scallions & black sesame seeds. Can be eaten cold or hot

Broccoli Salad w/ Red Onions, Tempeh (or Bacon) & Raisins…made w/ a light mayo or veganaise dressing

Lentil Salad with fresh sweet peppers, onions, and a basil vinaigrette

Pasta (whole wheat or gluten free) Salad w/ Sun dried Tomato Pesto

French Potato Salad~a light vinaigrette dressing  makes this salad a cool comfort

 

ENTREES:

Shrimp Scampi w/ Brown & Wild Rice and  steamed Green beans & Carrots(F)

Veggie enchiladas (V) ( or buffalo or chicken) w/ Rice & Roasted Corn w/ diced peppers and onions(F)

Beef Stew  w/ egg noodles (or Quinoa Stew) (V)(CP) Chunky vegetables, thick gravy. happy tummy!(F)

Salmon Corn Cakes w/ Garlic Roasted Potatoes & Steamed Broccoli(F)

Pan-seared {Dry*} Sea Scallops with smoked gouda risotto, and sauteed broccoli rabe. Please specify the whole meal.
* fresh & not soaked in STP (sodium tripolyphosphate)The STP solution gives scallops a longer shelf life by adding liquid & preservative…ick  🙁

Eggplant Parmesan (V)~~ The Best!(F)

Peg’s famous Falafel w/ Tzatziki sauce (cucumber and yogurt, delish and cool) or a tahini sauce. Ask for  wraps & make it a meal!(F)

Veggie or Buffalo Shepherd’s Pie(CP)~ Quinoa & fresh veggies or buffalo & veggies, topped w/ a mixture of pureed cauliflower , mashed potatoes & rutabagas….(F)

Black Bean Burgers(V)(CP)~  Spicy bean burgers in a bed of lettuce…salsa,avocado & Greek yogurt optional….  please specify quantity(F)

Shrimp creole w/ Brown rice & steamed broccoli~ a family favorite!(F)

Old fashioned Meatloaf, mashed potatoes and peas….the blue plate special!(F)

Potato Tortilla Espana ~ A potato torte consisting of potatoes, onions and egg~ a Spanish specialty(V)(CP)(F)

Broccoli Cheddar (V)(CP) or  Bacon & Swiss Quiche ~ Traditional quiche presented in an non-traditional way, and made with a wheat crust, or a potato crust…your choice.(F)

Polenta or Couscous w/ Sun-dried Tomato & Spinach,(V) topped with  Sauteed Shrimp or Chicken

Pasta, your choice, whole wheat or traditional w/ marinara sauce(V), meat sauce, red or white clam sauce

Koshari (V)~ an Egyptian casserole. pasta layered with lentils  ,chickpeas and  veggies,  Tangy & delicious!(F)

Yankee Pot Roast & Gravy  for 2 or more, with Egg noodles or potatoes  and roasted vegetables(F)

Chicken Francoise or Picatta or Breaded Chicken Cutlets or Sauteed Chicken Breast or Chicken Parm(F)

Turkey black bean Chili, Veggie Chili, Or Buffalo Chili (just like beef, but lean & lower Cholesterol)(F)

Roasted Brussels Sprouts~ Amazing!! even if you do not like brussels sprouts,

you will like these! (F)

Warm Farro Pilaf w/ Dried Cranberries , Farro is an Italian whole wheat berry with a nice chewy texture, combined w/ dried cranberries & toasted pine nuts….yum!(F)

 

Sandwiches

 

Panini or grill ready sandwiches!!  Grill’em the same as you would a grilled cheese sandwich, squash ’em in a waffle iron on high,or open ’em up & slide under the broiler or in a toaster oven…..

Grilled vegetables with Pesto Mayo (Mozzarella  or soy or rice cheese opt)(V)

Sauteed Chicken Breast w/ roasted red (or yellow) peppers, spring mix & provelone cheese w/ sundried tomato pesto(F)

Asparagus, grilled portobellas & brie on a crusty Baguette

Smoked Turkey, red onion,  roasted peppers, arugula & green olive tapinade (or any of the above mentioned pestos)(F)

Portobella ” burger” Grilled  and topped w/ Basil Pesto, sun-dried tomatoes and spinach(F)

OR: Great for a crowd, can be delivered later in the week, keeps well in the refrigerator:
Peg’s Famous Muffaletta:
Imagine a hollowed out loaf of Italian bread, layered with provolone, genoa salami,  smoked turkey, roasted peppers, marinaded artichokes, w/ a basil~black olive tapinade.
It is fabulous, can be heated in the oven and sliced or eaten cold… always a crowd pleaser!

If you want anything delivered later in the week, just let me know, I can do  a  Thurs or Friday easily.
